Chickpea, Strawberry & Pomegranate Salad

A fresh and vibrant salad made with rocket leaves, roasted chickpeas, strawberries, cherry tomatoes, cucumbers, and pomegranate seeds, finished with basil, lime, and rich pomegranate molasses for the perfect sweet and tangy flavour. The chickpeas are lightly roasted with olive oil, dried dill, and chilli flakes for added crunch and flavour.

Instructions

  1. 1. Toss the chickpeas with olive oil, dried dill, and chilli flakes, then roast until lightly crispy and golden. 


  1. 2. Add the rocket, tomatoes, strawberries, cucumbers, gherkins, chickpeas, basil, and pomegranate seeds to a large bowl.  


  1. 3. In a small bowl, whisk together the olive oil, lime juice, pomegranate molasses, dill, salt, and chilli flakes

  1. 4. Pour the dressing over the salad and toss gently until evenly coated.  


      Serving Suggestion:
      • Serve immediately or chill for 15–20 minutes before serving for stronger flavour.
