The Method

1. Preheat the oven: preheat your oven to 180°C (350°F). Lightly grease a tart or quiche dish with olive oil.

 

2. Prepare the base: place the tortillas into the tart dish, pressing them gently to cover the bottom and sides. Slightly overlap the edges if needed.

 

3. Prepare the filling: In a bowl, whisk together the eggs, double cream or milk, cajun spice, salt, and pepper until smooth. Stir in the chopped spinach, halved cherry tomatoes, and mozzarella balls.

 

4. Assemble the tarte: Pour the egg and vegetable mixture over the tortilla base. Sprinkle grated mozzarella, cheddar, and Parmesan evenly over the top.

 

5. Bake: Place the tarte in the preheated oven and bake for 25–30 minutes, or until the eggs are set and the cheese is golden and bubbling.

 

Serving Suggestion:
